1st Course:
Cranberry & Duck pemmican over winter greens with shaved root vegetables

2nd Course:
Trout Cake with scape aioli and tree leaf dust

3rd Course:
Steamed Mussels with braised winter greens & heritage beans in a smoked mushroom broth

4th Course:
Fire Roasted Turkey legs dressed in maple barbeque with squash puree and New Hampshire togarashi (spice of ground local peppers, ginger, seaweed, sunflower, maple)

5th Course:
Blueberry bannock with sugar maple frosting
